Coated in dark chocolate and brimming with dried fruit, these are utterly delicious!
Ingredients –
- 1 1/2 oz vegan margarine
- 1 1/2 oz caster sugar
- 1 oz plain flour, sieved
- 1 3/4 oz chopped almonds
- 1 3/4 oz chopped mixed peel or chopped mixed fruit
- 1 oz chopped raisins
- 1 oz chopped glace cherries
- Grated rind of half a lemon
- 4 1/2 oz dark vegan chocolate
Method –
- Melt the margarine and sugar in a saucepan.
- Remove from heat and stir in flour and mix well.
- Add the rest of the ingredients, excepting the chocolate, and mix well.
- Place spoonfuls of the mixture on two baking trays lined with greaseproof paper, so that you have 8 to 10 equal amounts. Press the mixture down slightly to a cookie shape.
- Bake for 10 minutes in a preheated oven at 180/350 degrees
- Remove from the oven and while still warm, bring in the edges of each florentine using a round cookie cutter as your guide. During baking the mixture spreads, so the edges need to be pushed towards the centre, making each florentine have a round biscuit shape.
- Leave to cool until firm and then transfer to a wire rack to cool completely.
- Melt the chocolate in a double boiler and spread over the smooth side of each florentine. You can use the prongs of a fork to create the wavy pattern in the chocolate.
